Pumpkin Muffins

Another day, another FaBOOlous recipe 
Pumpkin muffins for the win!

(Makes 8 muffins)


400 grams of shredded pumpkin
4 eggs, separate the white from the yolk
200 grams of monk fruit
250 grams of almond flour
60 grams of all-purpose flour
1 tbsp baking powder
3 tbsp Gran-Hola Butter
1/4 cup coconut oil
1 tbsp of cinnamon

Whip the sugar with the egg yolks, creating a fluffy and foamy light yellow cream!
Add the 3 tablespoons of GranHola Butter and beat it for longer
Separately mix the shredded pumpkin, then the flour and the baking powder.
Add the yolks, monk fruit and Gran-Hola butter
Beat the whites until stiff and incorporate them little by little, by hand into the previous mixture
Put it in a muffin tin and top them with “Smile & Wave” Gran-Hola
Heat the oven to 350 F and bake them for 40 min or until the stick comes out clean.
